Summer Sweet Corn Salad

With the abundance of fresh sweet corn available in the summer, you are bound to need a way to use it up. Try this easy sweet corn salad for a quick, delicious, and fresh side for your summer barbecues.

This recipe uses fresh ears of corn, however if you find yourself craving this in the winter you can use frozen corn. I don’t recommend using canned corn because it can be overly salty and mushy. You need a little crunch to the corn.

The ingredients are definitely interchangeable to what you like or have on hand. Leave something out if you don’t like it, or add something else that you do. I have added avocado, onion, or diced fresh bell pepper too.

Ingredients

  • 5 ears Fresh Sweet Corn
  • 3 slices Bacon cooked and crumbled
  • 1 cup Cucumber diced
  • 1/2 cup Roasted Red Peppers diced
  • 1/4 cup Feta Cheese
  • 1 tbsp Olive Oil
  • 1 Lime juiced

Instructions

  • Remove husks from corn and rinse. Cook until tender. I boiled mine but you can also microwave or grill them.
  • Let corn cool until easy to handle. Cut the corn from the cob.
  • In a medium size mixing bowl add corn, bacon, cucumber, red pepper and feta.
  • Stir and add olive oil and lime juice.
  • Season with salt and pepper to taste and chill until ready to serve.
