Summer Sweet Corn Salad

Ingredients
  

  • 5 ears Fresh Sweet Corn
  • 3 slices Bacon cooked and crumbled
  • 1 cup Cucumber diced
  • 1/2 cup Roasted Red Peppers diced
  • 1/4 cup Feta Cheese
  • 1 tbsp Olive Oil
  • 1 Lime juiced

Method
 

  1. Remove husks from corn and rinse. Cook until tender. I boiled mine but you can also microwave or grill them.
  2. Let corn cool until easy to handle. Cut the corn from the cob.
  3. In a medium size mixing bowl add corn, bacon, cucumber, red pepper and feta.
  4. Stir and add olive oil and lime juice.
  5. Season with salt and pepper to taste and chill until ready to serve.
