Method
- Remove husks from corn and rinse. Cook until tender. I boiled mine but you can also microwave or grill them.
- Let corn cool until easy to handle. Cut the corn from the cob.
- In a medium size mixing bowl add corn, bacon, cucumber, red pepper and feta.
- Stir and add olive oil and lime juice.
- Season with salt and pepper to taste and chill until ready to serve.
